In high speed blender (Blendtec or Vitamix produce best results; for commercial grade blenders veggies can be lightly boiled):
2 cups coconut milk (if using canned make sure it is additives free, organic is the best)
2 chopped red bell peppers
1 peeled chopped carrot
1 inch piece of ginger root (or half a tsp of ginger spice)
1 garlic clove
1 stalk lemongrass (can omit)
Dash of salt
Splash of some healthy oil (i.e. olive, hemp or flaxseed).
Serve with some chopped coriander and hemp seeds for extra protein.
Makes 2-3 portions
