Decadent Rosemary Walnut loaf

Happy Wednesday dreaming! French or Italian riviera, fresh breeze, smell of herbs in the air…. This baked goodie is a perfect match! Easy to make, even for inexperienced bakers :)

Ingredients:

2 cups ground almonds
1 cup ground flaxseed (if missing add another cup of almonds)
2 eggs
2 T olive oil
1 t baking powder
1 grated red onion
1 grated carrot
1 grated zucchini
1/2 cup warm filtered water ( if needed, flax tend to expand)
1 T fresh rosemary ( can use dried)
3 T chopped walnuts
2 t celtic or hymalaian salt (can adjust)
Dash of mixed crushed peppers
Dash of cinnamon

Whisk together in a bowl eggs, olive oil, salt, cinnamon and baking powder until fluffy. Add in almonds and flax. Pour in water if mixture is too hard and mix well. Texture should be quite sticky. Add grated veggies, walnuts and rosemary. Mix well again and spoon into grease paper lined bread dish (or any other dish deep enough). Bake for an hour, 180 C. 

Lovely with some good quality soft herb and garlic infused french or italian cheese. For dairy free option dip in olive oil or spread olive or sundried tomato paste.
